During our highly-successful REALTOR luncheon at McClure Farms in late September, our guests had the opportunity to taste Three Sisters Catering’s Butternut Squash Soup* and it was a BIG hit! With temperatures dropping this weekend, it is the perfect time to cook up a delicious batch of soup and Three Sisters Catering has kindly agreed to share their delicious Butternut Squash recipe.
Ingredients needed for the Butternut Squash Soup include:
- 1 (2 to 3 pound) butternut squash, peeled and seeded
- 2 tablespoons of unsalted butter
- 1 medium white onion, chopped
- 6 cups chicken stock
- Nutmeg
- Salt and black pepper
Once you have all of the ingredients, cut the squash into approximately one-inch chunks. Melt butter in a large pot. Add onion and cook until translucent, about eight minutes. Add squash and stock to the mixture. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Remove squash chunks and place in a blender. Puree and return to pot. Stir and season with nutmeg, salt and pepper to taste.
