If you’re searching for the perfect side to complement your ribs, hotdogs and hamburgers, then we have the perfect suggestion for you. It’s a potato salad with a twist.
Most Southern families have a potato salad recipe that they make for everything from grilling out with friends to attending the yearly family reunion. However, if you’re looking for something a bit different for this weekend’s backyard barbecue, then you may want to try this delicious recipe for Potato Cobb Salad that we found on Southern Living!
Potato Cobb Salad
- 3 lbs. Yukon gold potatoes
- 3/4 tsp. salt
- 1 (16 oz.) bottle of olive oil and vinegar dressing, divided
- 8 cups mixed salad greens
- 2 large avocados, peeled and chopped
- 1 Tbs. fresh lemon juice
- 3 large tomatoes, diced
- 12 small green onions, sliced
- 2 cups of shredded sharp Cheddar cheese
- 4 oz. crumbled blue cheese
- 6-8 slices of bacon, cooked and crumbled
- Pepper to taste
To make, cook the potatoes until tender, drain, cool and slice into cubes. Toss the cooled potatoes with the salt and one cup of dressing, and chill two hours or overnight. Toss the chopped avocados with the lemon juice, and place the salad greens on a serving platter. Arrange the potatoes, tomatoes, green onions, Cheddar and blue cheeses and bacon in rows over the salad. Sprinkle the dish with pepper and serve with the rest of the olive oil dressing.
